Ingredients
  

  • 600 grams chicken tenders or sliced chicken breast
  • 2 eggs
  • 2 tbsp milk
  • 1 cup plain breadcrumbs or panko
  • Half a cup grated hard cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Half a teaspoon sweet paprika
  • Salt and ground black pepper to taste
  • 2 tbsp olive oil
  • Chopped parsley for garnish if desired

Instructions
 

  • Preheat oven to 220 degrees Celsius. Line a tray with parchment or set a wire rack on top
  • Pat the chicken dry and season with salt and black pepper
  • In one bowl, whisk eggs and milk
  • In a second bowl, mix breadcrumbs with cheese, garlic powder, onion powder, and paprika
  • Dip each piece of chicken first into the egg mixture, then into the breadcrumb mixture. Press gently to coat fully
  • Place the coated chicken onto the tray
  • Lightly drizzle or brush olive oil on top of each tender
  • Bake for 10 minutes, then flip each tender and bake for another 10 minutes until golden and cooked through
  • Let rest for 2 minutes before serving
  • Sprinkle with parsley if using

Notes

For extra crunch, use panko instead of regular breadcrumbs
These tenders freeze well after baking
Reheat in a hot oven to bring back the crisp texture
Great with mustard, garlic dip, or tomato salsa
You can turn these into chicken nuggets by cutting the meat smaller
