- 600 grams chicken tenders or sliced chicken breast
 - 2 eggs
 - 2 tbsp milk
 - 1 cup plain breadcrumbs or panko
 - Half a cup grated hard cheese
 - 1 tsp garlic powder
 - 1 tsp onion powder
 - Half a teaspoon sweet paprika
 - Salt and ground black pepper to taste
 - 2 tbsp olive oil
 - Chopped parsley for garnish if desired
 
 
Preheat oven to 220 degrees Celsius. Line a tray with parchment or set a wire rack on top
Pat the chicken dry and season with salt and black pepper
In one bowl, whisk eggs and milk
In a second bowl, mix breadcrumbs with cheese, garlic powder, onion powder, and paprika
Dip each piece of chicken first into the egg mixture, then into the breadcrumb mixture. Press gently to coat fully
Place the coated chicken onto the tray
Lightly drizzle or brush olive oil on top of each tender
Bake for 10 minutes, then flip each tender and bake for another 10 minutes until golden and cooked through
Let rest for 2 minutes before serving
Sprinkle with parsley if using
 
For extra crunch, use panko instead of regular breadcrumbs
These tenders freeze well after baking
Reheat in a hot oven to bring back the crisp texture
