Ingredients
  

  • 2 cups sliced strawberries
  • 1 large English cucumber thinly sliced
  • 2 tablespoons finely chopped fresh mint
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon olive oil
  • Pinch of sea salt
  • Pinch of black pepper
  • 2 tablespoons crumbled feta cheese for garnish

Instructions
 

  • Wash the strawberries and cucumber thoroughly. Slice the strawberries into thin rounds and the cucumber into half moons or rounds, as preferred.
  • In a large mixing bowl, combine the sliced strawberries and cucumber.
  • In a small bowl or measuring cup, whisk together the lime juice, honey, olive oil, salt, and black pepper until well blended.
  • Drizzle the dressing over the cucumber and strawberry mixture.
  • Add the chopped mint and gently toss everything together until evenly coated.
  • Sprinkle crumbled feta cheese on top just before serving for a creamy contrast.
