- 8 cups sliced fresh or frozen peaches
- 1 cup granulated sugar for filling
- 1 cup light brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1 cup all-purpose flour
- 1 cup granulated sugar for batter
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup whole milk
- 1 stick unsalted butter
Preheat your oven to 375 degrees Fahrenheit.
In a medium saucepan over medium heat, combine sliced peaches, 1 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
Cook the peach mixture for 8–10 minutes until it starts to bubble and thicken. Stir frequently and remove from heat.
Place the stick of butter in a 9 x 13 inch baking dish and set it in the preheated oven until the butter melts completely. Remove the dish and set aside.
In a mixing bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt.
Stir in the milk until a smooth batter forms.
Pour the batter directly over the melted butter in the baking dish. Do not stir.
Spoon the warm peach mixture evenly over the batter without mixing them together. The batter will rise to the top as it bakes.
Bake for 40–45 minutes or until the top is golden brown and slightly crisp.
Let the cobbler cool for at least 15–20 minutes before serving to allow the juices to settle.
