Ingredients
  

  • 2 cups plain Greek yogurt
  • 1 cup natural creamy peanut butter
  • 1 tablespoon melted coconut oil
  • 4 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt
  • 3 tablespoons dark chocolate chips
  • 1 teaspoon coconut oil for melting chocolate

Instructions
 

  • Line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  • In a medium mixing bowl, combine Greek yogurt, peanut butter, melted coconut oil, honey, vanilla extract, and sea salt. Stir until smooth and fully incorporated.
  • Pour the mixture into the prepared pan and spread evenly with a spatula. Smooth the top to create a flat surface.
  • In a microwave safe bowl, combine dark chocolate chips and 1 teaspoon of coconut oil. Microwave in 20 second intervals, stirring between each, until fully melted and smooth.
  • Drizzle the melted chocolate over the yogurt base. Use a toothpick or knife to swirl if desired.
  • Cover the pan with plastic wrap or foil and place in the freezer for at least 4 hours or until fully set.
  • Once frozen, lift the bars from the pan using the parchment paper. Cut into 12 equal squares.
  • Serve immediately or store in the freezer with layers of parchment between slices.
