- 2 cups plain Greek yogurt
- 1 cup natural creamy peanut butter
- 1 tablespoon melted coconut oil
- 4 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 pinch sea salt
- 3 tablespoons dark chocolate chips
- 1 teaspoon coconut oil for melting chocolate
Line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
In a medium mixing bowl, combine Greek yogurt, peanut butter, melted coconut oil, honey, vanilla extract, and sea salt. Stir until smooth and fully incorporated.
Pour the mixture into the prepared pan and spread evenly with a spatula. Smooth the top to create a flat surface.
In a microwave safe bowl, combine dark chocolate chips and 1 teaspoon of coconut oil. Microwave in 20 second intervals, stirring between each, until fully melted and smooth.
Drizzle the melted chocolate over the yogurt base. Use a toothpick or knife to swirl if desired.
Cover the pan with plastic wrap or foil and place in the freezer for at least 4 hours or until fully set.
Once frozen, lift the bars from the pan using the parchment paper. Cut into 12 equal squares.
Serve immediately or store in the freezer with layers of parchment between slices.
