- 3 ripe peaches sliced
- 1 cup fresh squeezed lemon juice
- 3 cups cold water
- 1 cup granulated sugar
- 1 cup hot water
- Ice cubes
- Fresh peach slices for garnish
- Fresh mint for garnish
In a medium saucepan, combine sliced peaches with one cup of granulated sugar and one cup of hot water. Stir to dissolve the sugar. Bring to a simmer over medium heat and cook for 8 to 10 minutes until peaches are very soft.
Remove from heat and let the peach mixture cool slightly.
Transfer the peach mixture to a blender or food processor and blend until smooth. Strain through a fine mesh sieve into a bowl or pitcher to remove pulp.
In a large pitcher, combine the freshly squeezed lemon juice and three cups of cold water. Stir to mix.
Pour in the strained peach syrup and mix well until fully combined.
Taste and adjust sweetness if needed by adding extra sugar or lemon juice to suit your preference.
Refrigerate for at least one hour to chill thoroughly.
To serve, fill glasses with ice, pour in the peach lemonade, and garnish with peach slices and mint.
