- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 1/2 cups rolled oats
- 1/2 cup unsalted butter softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup marshmallow creme
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Cream together the softened butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.
Add eggs and vanilla extract. Beat until well combined.
In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.

Pair up cookies of similar size. Spread or pipe about 2 tablespoons of filling on the flat side of one cookie.
Top with a matching cookie and gently press to sandwich.
Repeat with the remaining cookies and filling. Let set at least 15 minutes before serving.
