- 1 cup unsalted butter softened
 - 1 cup granulated sugar
 - 1 tablespoon lemon zest
 - 2 tablespoons freshly squeezed lemon juice
 - 1 large egg
 - 2 cups all-purpose flour
 - 1 teaspoon baking powder
 - 1 tablespoon dried culinary lavender
 - 1/4 teaspoon salt
 
 
Preheat your oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
In a large mixing bowl, cream the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 2 to 3 minutes.
Add the lemon zest, lemon juice, and egg. Beat until fully combined and the mixture is smooth.
In a separate bowl, whisk together the flour, baking powder, dried lavender, and salt.
Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms.
Use a cookie scoop or tablespoon to portion out the dough. Roll into balls and place them 2 inches apart on the prepared baking sheets.
Gently flatten each dough ball slightly with your hand or the bottom of a glass.
Bake for 11 to 13 minutes, until the edges are set and just barely golden. Do not overbake.
Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
