- 500 grams ground turkey
 - 1 tbsp olive oil
 - 1 small onion finely chopped
 - 2 cloves garlic minced
 - 1 red bell pepper diced
 - 1 zucchini chopped
 - Half a cup corn kernels fresh or frozen
 - 1 cup canned crushed tomatoes
 - 1 tsp ground cumin
 - Half a teaspoon paprika
 - Half a teaspoon dried oregano
 - Salt and ground black pepper to taste
 - Chopped fresh parsley or green onion for garnish
 - Optional: cooked rice pasta, or tortillas for serving
 
 
Heat olive oil in a large skillet over medium heat
Add chopped onion and sauté for 3 minutes until soft
Stir in garlic and cook for one more minute
Add ground turkey and break it apart as it browns
Season with cumin, paprika, oregano, salt, and pepper
Once turkey is mostly cooked, stir in bell pepper, zucchini, and corn
Cook for 5 to 6 minutes until vegetables soften slightly
Add crushed tomatoes and stir well
Let the skillet simmer gently for 5 minutes to blend the flavors
Taste and adjust seasoning if needed
Serve hot, garnished with parsley or green onion
 
This recipe works great with ground chicken or beef
Add spinach or kale at the end for more greens
Top with shredded cheese or avocado for extra richness
