Ingredients
  

  • 500 grams ground turkey
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 zucchini chopped
  • Half a cup corn kernels fresh or frozen
  • 1 cup canned crushed tomatoes
  • 1 tsp ground cumin
  • Half a teaspoon paprika
  • Half a teaspoon dried oregano
  • Salt and ground black pepper to taste
  • Chopped fresh parsley or green onion for garnish
  • Optional: cooked rice pasta, or tortillas for serving

Instructions
 

  • Heat olive oil in a large skillet over medium heat
  • Add chopped onion and sauté for 3 minutes until soft
  • Stir in garlic and cook for one more minute
  • Add ground turkey and break it apart as it browns
  • Season with cumin, paprika, oregano, salt, and pepper
  • Once turkey is mostly cooked, stir in bell pepper, zucchini, and corn
  • Cook for 5 to 6 minutes until vegetables soften slightly
  • Add crushed tomatoes and stir well
  • Let the skillet simmer gently for 5 minutes to blend the flavors
  • Taste and adjust seasoning if needed
  • Serve hot, garnished with parsley or green onion
