- 8 slices white sandwich bread
 - 8 slices American or cheddar cheese
 - 2 tablespoons unsalted butter softened
 
 
Lay each slice of bread flat on a cutting board. Using a rolling pin, gently roll each slice to flatten it.
Trim off the crusts from each slice for easier rolling and to ensure even cooking.
Place one slice of cheese on each flattened slice of bread. Fold cheese to fit if necessary.
Starting from one end, tightly roll up the bread and cheese into a log. Press gently at the seam to seal.
Spread a small amount of softened butter on the outside of each roll up, covering all sides.
Heat a nonstick skillet over medium heat.
Place the roll ups seam side down in the skillet. Cook for 2 to 3 minutes per side, turning as needed until all sides are browned and cheese is melted.
Remove from skillet and serve warm. Delicious on their own or with tomato soup or dipping sauce.
