- 1.5 pounds sirloin steak cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 4 tablespoons unsalted butter
- 5 garlic cloves minced
- 1 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon crushed red pepper flakes
Remove the steak from the refrigerator and let it sit at room temperature for 15 to 20 minutes.
Pat the steak cubes dry with paper towels and place them in a mixing bowl. Toss with olive oil, salt, and black pepper.
Heat a large cast iron skillet over medium-high heat until very hot.
Add the steak cubes in a single layer, working in batches if needed. Sear for 2 to 3 minutes on the first side until golden brown and crusty. Flip and cook for another 2 minutes for medium doneness.
Once all steak bites are cooked, return them to the skillet and lower the heat to medium.
Add butter, garlic, herbs, and crushed red pepper flakes. Stir constantly as the butter melts and the garlic becomes fragrant, about 1 to 2 minutes.
Toss the steak bites in the garlic butter mixture until fully coated. Remove from heat.
Garnish with extra parsley if desired and serve immediately with your favorite sides.
