Ingredients
  

  • 2 medium sweet potatoes peeled and cut into thin fries
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch
  • Half teaspoon paprika
  • Quarter teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional
  • Dipping sauce such as ketchup or spicy mayo

Instructions
 

  • Preheat oven to 220 degrees Celsius
  • Peel sweet potatoes and slice into even thin fries
  • Soak in cold water for 30 minutes to remove excess starch
  • Drain and pat dry thoroughly with a towel
  • In a large bowl, toss fries with cornstarch until lightly coated
  • Add olive oil, paprika, garlic powder, salt, and pepper
  • Spread fries in a single layer on a parchment lined baking sheet
  • Bake for 15 minutes, flip, then bake another 15 minutes until crisp
  • Let cool for a few minutes to firm up before serving
  • Sprinkle with parsley and serve with your favorite sauce

Notes

  • For extra crispy results, use convection setting if your oven has it
  • Slice fries as evenly as possible for even cooking
  • You can season with cayenne or chili powder for heat
  • Do not overcrowd the pan — use two trays if needed
