- 1 cup cottage cheese
- 2 large eggs
- 1 cup milk
- 2 tablespoons olive oil
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon sugar
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with cooking spray or butter.
In a large mixing bowl, combine the cottage cheese, eggs, milk, and olive oil. Whisk until well combined.
In another bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
Add the dry ingredients into the wet ingredients. Stir just until combined. Do not overmix.
