Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons olive oil
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with cooking spray or butter.
  • In a large mixing bowl, combine the cottage cheese, eggs, milk, and olive oil. Whisk until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  • Add the dry ingredients into the wet ingredients. Stir just until combined. Do not overmix.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 40 to 45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Remove from the oven and let the bread cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before slicing.
  • Slice and serve warm or at room temperature.
