  • 1 cup full-fat cottage cheese
  • 1 tablespoon olive oil or melted butter
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped chives or scallions

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a 9-inch baking dish with olive oil or melted butter.
  • In a large mixing bowl, crack in the eggs and whisk until frothy.
  • Stir in the cottage cheese, salt, pepper, garlic powder, and smoked paprika. Whisk until combined.
  • Pour the egg mixture into the prepared baking dish, smoothing the top.

  • Bake for 28 to 32 minutes, or until the center is set and the top is lightly golden.
