American Flag Fruit Pizza

This American Flag Fruit Pizza features a soft sugar cookie crust topped with sweetened cream cheese frosting and fresh berries arranged as the stars and stripes of the USA flag. It’s festive, light, and the perfect patriotic dessert for summer or any red, white and blue celebration.

Ingredients
  

  • 1 package refrigerated sugar cookie dough
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh strawberries sliced
  • Fresh mint leaves for garnish

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a 9x13 inch rimmed baking sheet with parchment paper.
  • Press the sugar cookie dough evenly into the bottom of the baking sheet to form the crust. Bake for 12 to 15 minutes or until lightly golden around the edges. Let it cool completely.
  • In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract. Beat until light and fluffy.
  • Spread the cream cheese frosting evenly over the cooled cookie crust using an offset spatula.
  • To create the flag design, arrange the blueberries in the upper left corner to form the star's square.
  • Starting from the top right corner and moving down, alternate rows of sliced strawberries and raspberries to create the red stripes, leaving space between for the white frosting to show through as the white stripes.
  • Garnish with fresh mint leaves, if desired.
  • Chill for at least 30 minutes before slicing and serving.
