- 8 egg roll wrappers
 - 8 ounces cream cheese softened
 - 1 teaspoon vanilla extract
 - 3 tablespoons granulated sugar
 - 1 cup cherry pie filling
 - 1 egg beaten (for sealing)
 - Cooking spray
 - Powdered sugar for garnish
 
 
In a medium mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Mix until smooth and creamy.
Lay one egg roll wrapper on a clean surface with one corner pointing toward you.
Spoon about 2 tablespoons of the cream cheese mixture onto the center of the wrapper and top with 1 to 2 teaspoons of cherry pie filling.
Fold the bottom corner up over the filling, then fold in the sides, and roll up tightly. Brush a little of the beaten egg along the top edge to seal the wrapper.
Repeat with the remaining wrappers and filling.
Lightly spray the outside of each egg roll with cooking spray to help them crisp up in the air fryer.
Preheat the air fryer to 375 degrees Fahrenheit for 3 minutes.
Place the egg rolls in a single layer in the air fryer basket. Cook at 375 degrees for 8 to 10 minutes or until golden brown and crispy, flipping halfway through.
Remove with tongs and let cool for a few minutes.
Dust with powdered sugar just before serving.
