- 4 ounces goat cheese
- 2 ounces cream cheese
- 1 tablespoon olive oil
- 1 tablespoon milk or cream
- 1 teaspoon lemon juice
- Salt to taste
- Black pepper to taste
In a medium mixing bowl, combine the goat cheese and cream cheese. Let the cheeses sit at room temperature for about 10 minutes to soften for easier whipping.
Using a hand mixer or food processor, beat the cheeses together until smooth and fluffy, about 2 to 3 minutes. Scrape down the sides as needed.
Add olive oil, milk or cream, and lemon juice. Continue mixing until fully incorporated and the texture is soft and whipped.
Season with salt and black pepper to taste. Mix again briefly to combine.
Transfer to a serving bowl. Garnish with a drizzle of olive oil, fresh herbs, or honey if desired. Serve immediately or chill until ready to use.
