Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 teaspoons olive oil
  • 1 cup cooked seasoned rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup nacho cheese sauce
  • 1 cup sour cream
  • 1 cup pico de gallo
  • 4 large flour tortillas 10-inch size
  • Salt to taste

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, about 6 to 8 minutes, breaking it up with a spoon as it cooks.
  • Stir in the taco seasoning and a splash of water if needed. Let it simmer for 2 to 3 more minutes until fully combined and thickened. Remove from heat.
  • Warm the flour tortillas in the microwave between two damp paper towels for about 20 seconds to make them soft and pliable.
  • On each tortilla, layer 2 to 3 tablespoons of seasoned rice, followed by about one quarter of the taco meat mixture.
  • Spoon 2 tablespoons of nacho cheese sauce over the beef, then scatter a handful of shredded cheddar and Monterey Jack cheese on top.
  • Add a dollop of sour cream and a heaping spoonful of pico de gallo to each burrito.
  • Fold in the sides of the tortilla, then roll it up tightly from the bottom to secure the fillings.
  • If desired, place the burritos seam-side down in a heated skillet for 1 to 2 minutes to crisp the outside slightly.
  • Serve warm and enjoy immediately.
