Ingredients
  

  • 8 ounces spaghetti or rice noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 tablespoon grated ginger
  • 1 teaspoon red pepper flakes
  • 1/3 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • Juice of 1 lime
  • 2 to 4 tablespoons warm water to thin
  • Chopped green onions for garnish
  • Chopped peanuts for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the noodles according to package instructions until al dente. Drain and set aside.
  • In a medium mixing bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, and lime juice. Add 2 tablespoons of warm water and whisk until smooth. Add more water as needed to reach your desired sauce consistency.
  • In a large skillet or saucepan, heat vegetable oil over medium heat. Add minced garlic, grated ginger, and red pepper flakes. Sauté for about 1 minute until fragrant.
  • Pour the peanut sauce into the skillet and stir until hot and slightly thickened, about 2 minutes.
  • Add the cooked noodles to the skillet and toss to coat evenly with the sauce. Use tongs to ensure the sauce is distributed throughout.
  • Serve the noodles warm, garnished with chopped green onions and chopped peanuts.
