- 8 ounces spaghetti or rice noodles
 - 2 tablespoons vegetable oil
 - 3 cloves garlic minced
 - 1 tablespoon grated ginger
 - 1 teaspoon red pepper flakes
 - 1/3 cup creamy peanut butter
 - 2 tablespoons soy sauce
 - 1 tablespoon rice vinegar
 - 1 tablespoon sesame oil
 - 1 tablespoon honey
 - Juice of 1 lime
 - 2 to 4 tablespoons warm water to thin
 - Chopped green onions for garnish
 - Chopped peanuts for garnish
 
 
Bring a large pot of salted water to a boil. Cook the noodles according to package instructions until al dente. Drain and set aside.
In a medium mixing bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, and lime juice. Add 2 tablespoons of warm water and whisk until smooth. Add more water as needed to reach your desired sauce consistency.
In a large skillet or saucepan, heat vegetable oil over medium heat. Add minced garlic, grated ginger, and red pepper flakes. Sauté for about 1 minute until fragrant.
Pour the peanut sauce into the skillet and stir until hot and slightly thickened, about 2 minutes.
Add the cooked noodles to the skillet and toss to coat evenly with the sauce. Use tongs to ensure the sauce is distributed throughout.
Serve the noodles warm, garnished with chopped green onions and chopped peanuts.
