Savory Skillet Sausage with Peppers and Onions

- 4 Italian sausage links sweet or spicy
 - 1 red bell pepper
 - 1 green bell pepper
 - 1 yellow bell pepper
 - 1 large yellow onion
 - 2 tablespoons olive oil
 - 2 cloves garlic
 - Salt to taste
 - Black pepper to taste
 - 1 tablespoon chopped fresh parsley
 
 
Slice the sausage links into one-inch thick rounds.
Slice the bell peppers into thin strips and the onion into thin half-moons.
Heat the olive oil in a large skillet over medium-high heat.
Add sausage slices and cook for 5 to 7 minutes until browned on all sides.
Remove the sausage from the skillet and set aside.
In the same skillet, add a little more oil if needed and sauté the onions for 3 minutes.
Add sliced bell peppers and minced garlic and sauté for another 5 to 7 minutes until vegetables are soft and edges are browned.
Return the sausage to the skillet and toss everything together.
Season with salt and pepper to taste and cook for another 2 minutes to heat through.
Sprinkle with chopped parsley before serving.
