Ingredients
  

  • 4 Italian sausage links sweet or spicy
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 large yellow onion
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • Slice the sausage links into one-inch thick rounds.
  • Slice the bell peppers into thin strips and the onion into thin half-moons.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add sausage slices and cook for 5 to 7 minutes until browned on all sides.
  • Remove the sausage from the skillet and set aside.
  • In the same skillet, add a little more oil if needed and sauté the onions for 3 minutes.
  • Add sliced bell peppers and minced garlic and sauté for another 5 to 7 minutes until vegetables are soft and edges are browned.
  • Return the sausage to the skillet and toss everything together.
  • Season with salt and pepper to taste and cook for another 2 minutes to heat through.
  • Sprinkle with chopped parsley before serving.
