- 1 tablespoon olive oil
- 12 ounces smoked sausage sliced
- 1 small yellow onion diced
- 1 red bell pepper diced
- 2 garlic cloves minced
- 1 cup long grain white rice
- 1 can 14.5 ounces diced tomatoes with juices
- 2 cups chicken broth
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
- 2 tablespoons chopped fresh parsley
Heat the olive oil in a large skillet over medium heat.
Add the sliced sausage to the skillet and cook until browned on both sides, about 5 to 6 minutes. Remove the sausage to a plate and set aside.
In the same skillet, add the diced onion and bell pepper. Cook until softened, about 3 to 4 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the rice to the skillet and stir well to coat in the oil and vegetables. Toast the rice for 1 to 2 minutes.
Return the sausage to the skillet.
Pour in the canned diced tomatoes with their juices and the chicken broth. Stir in the paprika, oregano, a pinch of salt, and black pepper to taste.
Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 18 to 20 minutes, or until the rice is tender and the liquid is absorbed.
Remove from heat and let it rest for 5 minutes with the lid on.
Fluff the rice with a fork, sprinkle with chopped parsley, and serve hot.
