Ingredients
  

  • 1 tablespoon olive oil
  • 12 ounces smoked sausage sliced
  • 1 small yellow onion diced
  • 1 red bell pepper diced
  • 2 garlic cloves minced
  • 1 cup long grain white rice
  • 1 can 14.5 ounces diced tomatoes with juices
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced sausage to the skillet and cook until browned on both sides, about 5 to 6 minutes. Remove the sausage to a plate and set aside.
  • In the same skillet, add the diced onion and bell pepper. Cook until softened, about 3 to 4 minutes.
  • Stir in the minced garlic and cook for 1 minute until fragrant.
  • Add the rice to the skillet and stir well to coat in the oil and vegetables. Toast the rice for 1 to 2 minutes.
  • Return the sausage to the skillet.
  • Pour in the canned diced tomatoes with their juices and the chicken broth. Stir in the paprika, oregano, a pinch of salt, and black pepper to taste.
  • Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 18 to 20 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove from heat and let it rest for 5 minutes with the lid on.
  • Fluff the rice with a fork, sprinkle with chopped parsley, and serve hot.
