Ingredients
  

  • 2 cups fresh pineapple chunks
  • 4 kiwis peeled and sliced
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon honey
  • 1 tablespoon chopped fresh mint leaves
  • Pinch of sea salt

Instructions
 

  • On a clean cutting board, cut the fresh pineapple into bite-sized chunks and set them aside.
  • Peel the kiwis and slice them into rounds or half-moons for variety and texture.
  • In a small mixing bowl, whisk together the lime juice and honey until fully combined.
  • In a large mixing bowl, add the pineapple chunks and sliced kiwis. Drizzle the lime and honey mixture over the fruit.
  • Gently toss the fruit until evenly coated with the dressing.
  • Add chopped fresh mint leaves and a pinch of sea salt. Give it a final light toss.
  • Serve immediately or cover and chill in the refrigerator for up to 24 hours before serving.
