- 1.5 pounds boneless skinless chicken breast
- 1 fresh pineapple
- 2 tablespoons olive oil
- 3 tablespoons low sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- Wooden or metal skewers
Soak wooden skewers in water for at least 30 minutes to prevent burning. If using metal skewers, skip this step.
Cut the chicken breast into bite-sized pieces, about 1.5 inches each.
Peel and core the pineapple, then chop into 1.5 inch chunks to match the chicken size.
In a large bowl, whisk together olive oil, soy sauce, honey, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and black pepper.
Add the chicken pieces to the marinade, toss to coat evenly, cover, and refrigerate for at least 30 minutes or up to 4 hours.
Preheat your grill to medium-high heat, around 400°F (200°C).
Thread chicken and pineapple pieces alternately onto the skewers, leaving small gaps for even cooking.
Place skewers on the hot grill and cook for 10–12 minutes, turning occasionally, until the chicken is fully cooked (internal temperature 165°F).
Brush with extra marinade while grilling if desired (discard any leftover marinade after grilling).
