Ingredients
  

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon grated Parmesan cheese

Instructions
 

  • Preheat your oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.
  • Peel the sweet potatoes and cut them into evenly sized wedges or cubes, depending on your preferred shape.
  • Place the cut sweet potatoes into a large mixing bowl. Add olive oil, salt, black pepper, smoked paprika, and garlic powder. Toss well to coat each piece evenly.
  • Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet.
  • Roast in the oven for 25 to 30 minutes, flipping halfway through, until they are golden brown and tender on the inside.
  • Remove from the oven and sprinkle with chopped parsley and grated Parmesan while still warm.
  • Serve immediately as a vibrant side dish or snack.
