Ingredients
  

  • 1 package 32 ounces frozen shredded hash brown potatoes
  • 8 ounces cream cheese softened
  • 1 cup sour cream
  • 1 can 10.5 ounces cream of chicken soup
  • 2 cups shredded sharp cheddar cheese
  • 4 tablespoons unsalted butter melted
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 sleeve Ritz crackers crushed
  • 2 tablespoons chopped fresh chives

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9x13 inch baking dish.
  • In a large mixing bowl, stir together the cream cheese, sour cream, melted butter, and cream of chicken soup until smooth and well combined.
  • Add in the shredded cheddar cheese, onion powder, garlic powder, salt, and pepper. Stir well to incorporate all ingredients.
  • Fold in the frozen shredded hash brown potatoes until fully coated in the creamy mixture.
  • Spread the potato mixture evenly into the greased baking dish, smoothing out the top with a rubber spatula.
  • Sprinkle the crushed Ritz crackers evenly over the top of the casserole.
  • Cover the dish loosely with aluminum foil and bake for 30 minutes.
  • Remove foil and bake for an additional 15 minutes, or until the top is golden brown and bubbly.
  • Remove from oven and let rest for 5 to 10 minutes. Garnish with chopped chives before serving.
