Ingredients
  

  • 1 ½ pounds boneless skinless chicken breasts cut into 1-inch pieces
  • 2 medium zucchinis sliced into half moons
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 cup cherry tomatoes halved
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped fresh parsley
  • 2 tablespoons olive oil
  • ¾ cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • Juice of half a lemon

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • In a large mixing bowl, combine the chopped chicken breast, zucchini, bell peppers, cherry tomatoes, and garlic.
  • Drizzle with olive oil and add oregano, thyme, salt, and black pepper. Toss everything together until evenly coated.
  • Squeeze fresh lemon juice over the mixture and toss once more. Pour the mixture into a 9x13 inch baking dish and spread out evenly.
  • Sprinkle the feta cheese over the top of the chicken and vegetables.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  • Remove the foil and sprinkle the mozzarella cheese over the top.
  • Continue baking uncovered for another 15 minutes or until the cheese is bubbling and the chicken is cooked through.
  • Remove from the oven and let rest for 5 minutes before sprinkling with fresh parsley.
  • Serve hot with your favorite sides or as is for a lighter option.
