- 1 ½ pounds boneless skinless chicken breasts cut into 1-inch pieces
 - 2 medium zucchinis sliced into half moons
 - 1 red bell pepper diced
 - 1 yellow bell pepper diced
 - 1 cup cherry tomatoes halved
 - 3 cloves garlic minced
 - 1 teaspoon dried oregano
 - ½ teaspoon dried thyme
 - 1 teaspoon salt
 - ½ teaspoon black pepper
 - ¼ cup chopped fresh parsley
 - 2 tablespoons olive oil
 - ¾ cup crumbled feta cheese
 - 1 cup shredded mozzarella cheese
 - Juice of half a lemon
 
 
Preheat the oven to 400 degrees Fahrenheit.
In a large mixing bowl, combine the chopped chicken breast, zucchini, bell peppers, cherry tomatoes, and garlic.
Drizzle with olive oil and add oregano, thyme, salt, and black pepper. Toss everything together until evenly coated.
Squeeze fresh lemon juice over the mixture and toss once more. Pour the mixture into a 9x13 inch baking dish and spread out evenly.
Sprinkle the feta cheese over the top of the chicken and vegetables.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
Remove the foil and sprinkle the mozzarella cheese over the top.
Continue baking uncovered for another 15 minutes or until the cheese is bubbling and the chicken is cooked through.
Remove from the oven and let rest for 5 minutes before sprinkling with fresh parsley.
Serve hot with your favorite sides or as is for a lighter option.
