Ingredients
  

  • 4 slices white or sourdough bread
  • 4 ounces cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • 2 jalapeños roasted and diced
  • 4 strips cooked bacon chopped
  • 2 tablespoons unsalted butter softened
  • 1 teaspoon garlic powder

Instructions
 

  • Roast the jalapeños over an open flame or under a broiler until blistered. Let cool, then peel and dice them. Set aside.
  • In a mixing bowl, combine the softened cream cheese, shredded cheddar, diced jalapeños, chopped bacon, and garlic powder until evenly mixed.
  • Lay out the bread slices on a cutting board. Spread the jalapeño popper mixture evenly on two slices. Top with the remaining slices to form two sandwiches.
  • Spread one side of each sandwich with softened butter.
  • Heat a skillet over medium heat. Place the sandwiches in the skillet, buttered side down. Butter the top side while the bottom cooks.
  • Grill each sandwich for 3 to 4 minutes per side, or until the bread is golden brown and the cheese mixture is melted inside.
  • Remove from the skillet, let rest for one minute, then slice and serve hot.
