Ingredients
  

  • 8 fresh jalapenos
  • 8 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon chopped fresh chives
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon milk
  • 1 cup seasoned breadcrumbs
  • Vegetable oil for frying or cooking spray for baking

Instructions
 

  • Prepare the jalapenos by removing the stems and seeds. Cut the jalapenos into halves, then cut each half into smaller chunks about 1 inch in size. You should get roughly 6 pieces per jalapeno.
  • In a medium bowl, mix the softened cream cheese, shredded cheddar cheese, crumbled bacon, garlic powder, onion powder, and chopped chives until well combined.
  • Using a small spoon or piping bag, fill each jalapeno piece with the cream cheese mixture, creating a small mound on top of each.
  • Prepare a breading station with three shallow bowls. Fill one with flour, the second with beaten eggs mixed with milk, and the third with seasoned breadcrumbs.
  • Dip each filled jalapeno piece into the flour, then into the egg mixture, then into the breadcrumbs, pressing gently to adhere.
  • If frying, heat oil in a deep skillet or fryer to 350°F (175°C). Fry the bites in batches for 2 to 3 minutes per side until golden and crispy. Drain on paper towels.
  • If baking, preheat the oven to 400°F (205°C). Place breaded bites on a parchment-lined baking sheet and spray lightly with cooking spray. Bake for 18 to 20 minutes or until golden and crisp.
  • Let cool slightly and serve warm with ranch dressing or your favorite dipping sauce.
