Ingredients
  

  • 1 pound Italian sausage sweet or spicy
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 can diced tomatoes 14.5 ounces
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste
  • 1 cup baby spinach
  • Freshly grated Parmesan cheese for garnish

Instructions
 

  • Heat a large skillet over medium heat and add the Italian sausage. Cook for about 5 to 6 minutes, breaking it up with a wooden spoon until browned and fully cooked. Remove from the skillet and set aside.
  • In the same skillet, add olive oil followed by the diced onion. Sauté for 2 to 3 minutes until translucent.
  • Add the garlic and diced bell peppers. Cook for another 3 to 4 minutes until the peppers begin to soften.
  • Stir in the uncooked orzo. Toast it gently for 1 to 2 minutes to enhance its nutty flavor.
  • Pour in the chicken broth and diced tomatoes with their juices. Stir in oregano and basil. Season with salt and black pepper to taste.
  • Return the sausage to the skillet. Stir everything together and bring to a simmer.
  • Cover the pan and cook for 10 to 12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
  • Stir in the spinach and cook for 1 to 2 more minutes until wilted.
  • Serve hot, garnished with freshly grated Parmesan cheese.
