Ingredients
  

  • 1 cup long grain white rice or basmati rice
  • 2 tablespoons olive oil
  • 1 small yellow onion finely chopped
  • 3 garlic cloves minced
  • 2 cups low-sodium chicken broth or vegetable broth
  • 1 teaspoon salt
  • 1 teaspoon lemon zest
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Freshly ground black pepper to taste

Instructions
 

  • Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well.
  • In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3 to 4 minutes until softened and translucent.
  • Stir in the minced garlic and cook for another 30 seconds until fragrant.
  • Add the rinsed rice to the saucepan and stir to coat the grains with the oil and aromatics. Toast the rice for 1 to 2 minutes, stirring regularly.
  • Pour in the chicken or vegetable broth, then add the salt and lemon zest. Stir to combine.
  • Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 to 18 minutes, or until the liquid is fully absorbed and the rice is tender.
  • Remove the saucepan from heat and let it sit, covered, for 5 minutes.
  • Fluff the rice with a fork and stir in the lemon juice and chopped parsley. Season with black pepper to taste.
  • Serve warm or at room temperature as a side dish to your favorite protein or vegetables.
