Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 large yellow onions thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon fresh thyme leaves
  • 2 cups cooked shredded chicken
  • 1 cup uncooked long grain white rice
  • 2 cups low sodium chicken broth
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Gruyère cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Preheat your oven to 375 degrees Fahrenheit. Grease a 9x13 inch baking dish and set aside.
  • In a large skillet, heat butter and olive oil over medium heat. Add sliced onions and sprinkle with salt and sugar. Sauté for 20 to 25 minutes until onions are deeply golden and caramelized, stirring occasionally. Add thyme leaves in the last few minutes. Remove from heat.
  • In a mixing bowl, combine cooked shredded chicken, uncooked white rice, chicken broth, sour cream, garlic powder, onion powder, and black pepper. Mix until well combined.
  • Spread the chicken and rice mixture evenly into the greased baking dish. Top with the caramelized onions.
  • Sprinkle shredded mozzarella and Gruyère cheese over the top. Cover with foil.
  • Bake covered for 40 minutes. Then remove foil and bake uncovered for an additional 10 to 15 minutes or until cheese is melted and bubbly and rice is tender.
  • Remove from oven and let stand for 10 minutes before serving. Garnish with chopped parsley.
