Ingredients
  

  • 2 English muffins split in half
  • 4 large eggs
  • 1 cup shredded mozzarella cheese
  • 4 tablespoons cooked and crumbled breakfast sausage
  • 2 tablespoons chopped red bell pepper
  • 2 tablespoons chopped green onion
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Heat olive oil in a small skillet over medium heat. Add red bell pepper and sauté until slightly softened, about 2 minutes. Set aside.
  • Place the split English muffins cut side up on the prepared baking sheet.
  • Lightly press down the centers of each muffin half to create a small well.
  • Sprinkle shredded mozzarella evenly over each muffin half.
  • Top with cooked sausage and sautéed red peppers.
  • Carefully crack one egg over the center of each muffin half or beat the eggs and spoon a few tablespoons onto each if preferred. Season with salt and pepper.
  • Bake in the preheated oven for 10-12 minutes or until the egg whites are set and cheese is melted.
  • Remove from oven and garnish with chopped green onion.
  • Serve warm and enjoy.
