- 2 English muffins split in half
 - 4 large eggs
 - 1 cup shredded mozzarella cheese
 - 4 tablespoons cooked and crumbled breakfast sausage
 - 2 tablespoons chopped red bell pepper
 - 2 tablespoons chopped green onion
 - Salt to taste
 - Black pepper to taste
 - 1 tablespoon olive oil
 
 
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Heat olive oil in a small skillet over medium heat. Add red bell pepper and sauté until slightly softened, about 2 minutes. Set aside.
Place the split English muffins cut side up on the prepared baking sheet.
Lightly press down the centers of each muffin half to create a small well.
Sprinkle shredded mozzarella evenly over each muffin half.
Top with cooked sausage and sautéed red peppers.
Carefully crack one egg over the center of each muffin half or beat the eggs and spoon a few tablespoons onto each if preferred. Season with salt and pepper.
Bake in the preheated oven for 10-12 minutes or until the egg whites are set and cheese is melted.
Remove from oven and garnish with chopped green onion.
Serve warm and enjoy.
