- 1 can black beans drained and rinsed
 - 1 can black-eyed peas drained and rinsed
 - 1 cup corn kernels fresh or frozen and thawed
 - 1 red bell pepper diced
 - 1 green bell pepper diced
 - 1 cup cherry tomatoes halved
 - 1 small red onion finely chopped
 - 1 jalapeño pepper seeded and finely chopped
 - 1 avocado diced
 - 1 tablespoon fresh lime juice
 - 3 tablespoons red wine vinegar
 - 3 tablespoons olive oil
 - 1 teaspoon garlic powder
 - 1 teaspoon ground cumin
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1/4 cup chopped fresh cilantro
 
 
In a large mixing bowl, combine the black beans, black-eyed peas, corn, bell peppers, cherry tomatoes, red onion, jalapeño, and avocado.
In a small bowl, whisk together the lime juice, red wine vinegar, olive oil, garlic powder, cumin, salt, and black pepper.
Pour the dressing over the bean and vegetable mixture.
Toss gently to combine, making sure all ingredients are coated with the dressing.
Stir in the fresh cilantro just before serving.
Cover and chill for at least 30 minutes to let the flavors meld, or serve immediately if short on time.
