Ingredients
  

  • 1 can black beans drained and rinsed
  • 1 can black-eyed peas drained and rinsed
  • 1 cup corn kernels fresh or frozen and thawed
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1 small red onion finely chopped
  • 1 jalapeño pepper seeded and finely chopped
  • 1 avocado diced
  • 1 tablespoon fresh lime juice
  • 3 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro

Instructions
 

  • In a large mixing bowl, combine the black beans, black-eyed peas, corn, bell peppers, cherry tomatoes, red onion, jalapeño, and avocado.
  • In a small bowl, whisk together the lime juice, red wine vinegar, olive oil, garlic powder, cumin, salt, and black pepper.
  • Pour the dressing over the bean and vegetable mixture.
  • Toss gently to combine, making sure all ingredients are coated with the dressing.
  • Stir in the fresh cilantro just before serving.
  • Cover and chill for at least 30 minutes to let the flavors meld, or serve immediately if short on time.
