Ingredients
  

  • 6 large baking apples such as Honeycrisp or Granny Smith
  • 8 ounces cream cheese softened
  • 1 egg
  • 1 tablespoon sour cream
  • 1 teaspoon vanilla extract
  • 1/3 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons graham cracker crumbs
  • 1 tablespoon melted butter
  • Additional graham cracker crumbs for topping

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a baking dish that will fit all the apples snugly.
  • Wash and dry apples. Use an apple corer or paring knife to remove the core from each apple, being careful not to puncture the bottom. Hollow out a cavity about 1 to 1.5 inches wide.
  • In a mixing bowl, combine softened cream cheese, egg, sour cream, vanilla extract, granulated sugar, and cinnamon. Use an electric hand mixer to blend until smooth and creamy.
  • Spoon the cheesecake mixture evenly into the hollowed apples, filling each to just below the top.
  • In a small bowl, stir together graham cracker crumbs and melted butter. Sprinkle about one teaspoon of this mixture on top of each filled apple.
  • Arrange the stuffed apples upright in the prepared baking dish. Bake for 30 to 35 minutes, or until apples are tender and cheesecake centers are set.
  • Remove from oven and allow to cool slightly before serving. For a firmer filling, chill in the fridge for an hour before serving.
  • Garnish with extra graham cracker crumbs or caramel drizzle if desired. Serve warm or chilled.
