- 4 cups mixed greens or baby arugula
 - 2 ripe peaches sliced thin
 - 1 cup fresh blueberries
 - 3 ounces feta cheese crumbled
 - 1 tablespoon finely chopped red onion
 - 2 tablespoons chopped fresh mint leaves
 - 1 tablespoon chopped fresh basil
 - 3 tablespoons extra virgin olive oil
 - 1 tablespoon fresh lime juice
 - 1 teaspoon honey
 - 1 teaspoon Dijon mustard
 - Salt to taste
 - Black pepper to taste
 
 
In a small jar or bowl, combine olive oil, lime juice, honey, Dijon mustard, salt, and black pepper. Whisk or shake until fully emulsified.
In a large salad bowl, add mixed greens.
Top greens with sliced peaches, blueberries, crumbled feta, chopped red onion, mint, and basil.
