- 2 cups fresh blackberries
 - 3 tablespoons granulated sugar
 - 1 teaspoon lemon juice
 - 1 teaspoon vanilla extract
 - 1 tablespoon water
 - 1 teaspoon unflavored gelatin
 - 1 cup heavy whipping cream
 - 2 tablespoons powdered sugar
 
 
In a medium saucepan over medium heat, combine the blackberries, granulated sugar, and lemon juice. Cook for about 4 to 5 minutes, stirring occasionally, until the berries soften and release their juices.
Remove from heat and press the mixture through a fine mesh sieve into a bowl to remove the seeds. Discard the seeds and let the purée cool slightly.
In a small bowl, sprinkle the gelatin over one tablespoon of cold water and let it sit for about 5 minutes to bloom. After it blooms, gently warm it in the microwave for about 10 seconds until fully dissolved.
Whisk the gelatin into the slightly warm blackberry purée along with the vanilla extract. Set aside to cool to room temperature.
In a mixing bowl, beat the heavy cream and powdered sugar with a hand mixer on high speed until stiff peaks form.
Gently fold one-third of the whipped cream into the blackberry mixture to lighten it. Then fold in the remaining whipped cream until fully combined and no streaks remain.
Spoon the mousse into serving glasses or ramekins and refrigerate for at least 2 hours or until set.
Garnish with fresh blackberries or mint leaves if desired before serving.
