Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter melted
  • 2 cups peeled and diced apples
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, granulated sugar, and brown sugar until combined.
  • In a separate bowl, whisk together the eggs, vanilla extract, milk, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir just until combined. Avoid overmixing.
  • Gently fold in the diced apples.
  • Using a spoon or cookie scoop, drop 2 to 3 tablespoon-sized mounds of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 16 to 18 minutes or until the fritters are golden brown and lightly firm to the touch.
  • While the fritters are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  • Remove fritters from the oven and allow them to cool on a wire rack for 5 to 10 minutes.
  • Drizzle the glaze over the slightly warm fritters and let it set for a few minutes before serving.
