Ingredients
  

  • 4 slices of bread
  • 1 ripe avocado
  • 4 slices of cheese cheddar or mozzarella recommended
  • 2 tablespoons unsalted butter
  • Salt to taste
  • Black pepper to taste
  • Lemon juice to taste

Instructions
 

  • Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork, then season with a pinch of salt, black pepper, and a few drops of lemon juice.
  • Butter one side of each bread slice.
  • Heat a skillet over medium heat.
  • Place two slices of bread, buttered side down, in the hot skillet.
  • Layer one slice of cheese onto each slice of bread in the skillet. Spoon the mashed avocado on top of the cheese, spreading it evenly.
  • Top with the remaining two slices of cheese and place the remaining slices of bread on top, buttered side facing up.
  • Cook for 3 to 4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  • Remove from the skillet and let rest for 1 to 2 minutes. Slice and serve warm.
