- 4 slices of bread
 - 1 ripe avocado
 - 4 slices of cheese cheddar or mozzarella recommended
 - 2 tablespoons unsalted butter
 - Salt to taste
 - Black pepper to taste
 - Lemon juice to taste
 
 
Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork, then season with a pinch of salt, black pepper, and a few drops of lemon juice.
Butter one side of each bread slice.
Heat a skillet over medium heat.
Place two slices of bread, buttered side down, in the hot skillet.
Layer one slice of cheese onto each slice of bread in the skillet. Spoon the mashed avocado on top of the cheese, spreading it evenly.
Top with the remaining two slices of cheese and place the remaining slices of bread on top, buttered side facing up.
Cook for 3 to 4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
Remove from the skillet and let rest for 1 to 2 minutes. Slice and serve warm.
