Ingredients
  

  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup grated parmesan cheese
  • ½ teaspoon smoked paprika
  • 1 large egg

Instructions
 

  • Preheat your air fryer to 400 degrees Fahrenheit.
  • Wash and dry the zucchini. Slice each zucchini in half lengthwise, then cut into ¼ inch thick half-moon slices.
  • In a small bowl, whisk the egg until frothy.
  • In a separate bowl, combine panko breadcrumbs, garlic powder, salt, black pepper, parmesan cheese, and smoked paprika.
  • Dip each zucchini slice into the egg, letting the excess drip off, then press into the breadcrumb mixture to coat evenly.
  • Place breaded zucchini slices in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.
  • Lightly mist the zucchini with olive oil or drizzle a small amount over the top.
  • Air fry for 10 to 12 minutes, flipping halfway through, until golden and crispy.
  • Serve hot with your favorite dipping sauce or alongside a main dish.
