- 2 medium zucchini
 - 2 tablespoons olive oil
 - 1 cup panko breadcrumbs
 - 1 teaspoon garlic powder
 - 1 teaspoon salt
 - ½ teaspoon black pepper
 - ¼ cup grated parmesan cheese
 - ½ teaspoon smoked paprika
 - 1 large egg
 
 
Preheat your air fryer to 400 degrees Fahrenheit.
Wash and dry the zucchini. Slice each zucchini in half lengthwise, then cut into ¼ inch thick half-moon slices.
In a small bowl, whisk the egg until frothy.
In a separate bowl, combine panko breadcrumbs, garlic powder, salt, black pepper, parmesan cheese, and smoked paprika.
Dip each zucchini slice into the egg, letting the excess drip off, then press into the breadcrumb mixture to coat evenly.
Place breaded zucchini slices in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.
Lightly mist the zucchini with olive oil or drizzle a small amount over the top.
Air fry for 10 to 12 minutes, flipping halfway through, until golden and crispy.
