Ingredients
- 1.5 pounds baby potatoes red or yellow, quartered
 - 14 oz smoked sausage sliced into rounds
 - 2 tbsps olive oil
 - 1 packet ranch seasoning mix 1 oz
 - 1½ cups shredded cheddar cheese
 - ½ tsp garlic powder
 - ½ tsp black pepper

Instructions
- Preheat the oven to 400°F (200°C).
 - In a large bowl, toss quartered potatoes with olive oil, ranch seasoning, garlic powder, black pepper, and paprika.
 - Spread potatoes evenly on a baking sheet and roast for 20 minutes.
 - Remove from oven, flip potatoes, and scatter sliced smoked sausage on top.
 - Return to oven and bake for another 12–15 minutes until potatoes are tender and golden.
 - Sprinkle shredded cheddar cheese over the entire pan and return to oven for 2–3 minutes, just until cheese is melted.
 - Remove and let rest for 5 minutes. Garnish with chopped parsley.
